Thursday night is pizza night at my house. I make two or three different pizzas, but my children always want one with hot dogs and another with pesto. The pizza above has fresh tomatoes, rugola, aged ricotta and mozzarella.
YUMMMMMM! Can I come over for Thursday night pizza night too? But I think the pizza would be cold by the time my plane arrived from the US. Or worse yet, all eaten up! Delicious snap!
I'm not sure if "aged ricotta" is the right name for that stuff in English, in Italian it's called "ricotta dura" or "marzottica." It's ricotta that has been aged and becomes solid, so that you can grate it.
MMMhhhh, it looks delicious! You know, I never got round to make a pizza....I know it's quite easy to make but somehow the procedure is still mysterious to me (lievitazione in the cloth?). You could have posted your recipe...please!

that looks delicious!!! Aged ricotta what is that? I know ricotta and ricotta salada but "aged"? It still sounds and probably tastes delicious!
